In the kitchen

Perfect rice, three ways.

Stove top

Bring 2 cups water to a boil with a tight lid. Add 1 cup rice, cover, reduce to a simmer. Cook 15–20 min until the water is absorbed.

Electric rice cooker

Use 1 cup dry rice to 2 cups water. Set to the white-rice setting and follow your cooker's manual.

Microwave (1200 W)

Combine 1 cup rice and 2¼ cups water in a covered microwave-safe tray. Cook on HIGH 15 min, then fluff with a fork.

Tip — soak 10–15 min before cooking for extra length, and always fluff with a fork, never a spoon.

Serves 6 · 60 min

Hyderabadi Dum Chicken Biryani

  1. Rinse 3 cups Chef's Secret® until clear; soak 20 min.
  2. Marinate 1 kg chicken in yogurt, ginger-garlic, biryani masala, chilli, mint & fried onion; rest 30 min.
  3. Parboil rice in salted water with whole spices to 70%; drain.
  4. Cook the marinated chicken until it releases its fat.
  5. Layer drained rice over chicken; top with saffron milk, ghee, fried onion & mint.
  6. Seal the lid, cook on low 25 min (dum), rest 10 min. Fold gently; serve with raita.
Serves 6 · 30 min

Saffron Garden Pulao

  1. Rinse 2 cups Chef's Secret®; soak 20 min, then drain.
  2. Bloom cardamom, clove & cumin in ghee; toast cashews.
  3. Add onion, then carrot, beans & peas; season with salt.
  4. Stir in the rice with a pinch of saffron to coat.
  5. Add 3 cups water; boil, cover, simmer low 8–10 min until absorbed.
  6. Rest 5 min, fork through, finish with fried onion & coriander.
