From pouch to pass

  1. Heat a heavy-bottomed pot or handi.
  2. Sauté desired protein (chicken, lamb, vegetables, etc.) until lightly browned.
  3. Add ODOD Biryani Paste, stirring well to coat the protein/vegetables. Cook for 3-5 minutes.
  4. Add a small amount of water or stock if needed to achieve desired consistency.
  5. Layer the protein/vegetable mixture with par-cooked Basmati rice.
  6. Drizzle with ghee (optional), garnish with fried onions and fresh herbs, then seal and dum cook on low heat until rice is fully cooked and flavors meld.
